Recipe 1: Pizza-stuffed Peppers Ingredients:
- 2 red peppers
- Handful of grated cheese
- 300g jar of passata
- Sliced black olives
- Beef pepperoni
- 500g low-fat minced beef
- 1 garlic clove
- Pinch of mixed dried herbs
Method:
- Slice the peppers in half lengthwise, removing the seeds. In a pan, fry the minced garlic and minced beef until cooked through. Season with salt, pepper, and mixed herbs. Allow to cool.
- Line an ovenproof dish with passata, season lightly with salt and pepper, and place sliced peppers on top.
- Fill peppers with cooked minced beef, grated cheese, olives, and beef pepperoni.
- Bake at 180°C for 20-30 minutes.
